Sartori Invests $47 Million to Expand Plymouth Cheese Plant: Five New Production Lines and Up to 27 Jobs
The Wisconsin Economic Development Corporation (WEDC) announced on October 29 that Sartori Company, the cheesemaker based in Plymouth, in Sheboygan County, Wisconsin, will invest $47 million to expand and equip its whey-converting site in the city. The project will add 68,000 square feet to the existing 106,254-square-foot converting plant to house five new production lines that will support the company's next five years of business growth and create up to 27 new jobs.
WEDC is supporting the project by authorizing up to $450,000 in state income tax credits over the next three years. The actual amount of credits Sartori will receive is contingent on the number of jobs created and the amount of capital investment during that period. Sartori broke ground on the project in December 2025 and expects to complete the building by spring 2027; production lines will then be added in phases, with the full project expected to be completed in 2030.
"Our business has experienced significant growth over the past decade," said Bert Sartori, the company's CEO. "This 68,000-square-foot expansion of our converting facility will increase capacity and create opportunities for innovation as we continue sharing great cheese with customers and consumers around the world." He added that Wisconsin has an incredible dairy heritage, that the company's milk comes from local Wisconsin family farms, and that the expansion will support demand for top-quality local milk, create 27 new jobs, and strengthen the communities that have supported Sartori for generations.
A fourth-generation, family-owned company founded in 1939 by Paolo Sartori, the cheesemaker still operates from Wisconsin and has won more than 330 domestic and international awards.

Miller, secretary and CEO of WEDC, the state's leading economic development organization. "Sartori Company's continued investment in the state is a testament to Wisconsin's agricultural tradition and commitment to dairy. Wisconsin is the top cheese-producing state in the United States, producing 25 percent of the nation's cheese and 14 percent of its milk. Plymouth, where Sartori was founded and still operates, is known as the "Cheese Capital of the World" and is responsible for producing more than 14 percent of all the cheese consumed in the United States.
